Whether you love football or hate it, the chances are there’s someone in your household or family who is a bit of a fan. Rather than poo-poo the whole sport idea why not join in from a social perspective and try a few new food and snack ideas for some patriotic fun?
Written by the Life Doctor to get our palates ready for the World Cup! There have been some fascinating articles this week on the news and health websites that World Cup fever can literally be heart-stopping. Not only do the instances of heart attacks rise dramatically (especially when the game goes to penalties) but with all the beer and salty, fatty, sugary snacks and lack of exercise, our health suffers ten fold during World Cup season. According to the British Medical Journal the incident of heart problems rose alarmingly during the 1998 World Cup with a marked 25% increase of heart attacks after England lost to Argentina in the penalty shoot out. So, with all that in mind maybe this season is the one to introduce less ‘vindaloo’ and more healthy snacks into all of our diets without ruining the fun of the occasion. You can be as adventurous as you like, going all out for a themed range of foods if you wish. Alternatively you may like some better ideas than the traditional beer, crisps, pizza’s or curries for the chaps in your life. Take a look at these World Cup Food and Snack ideas and above all – enjoy the next few weeks as there’s no getting away from it!! Come on England… 3 lions on my shirt.. Red & White Ideas (try arranging in a St Georges Flag design…) Patriotic Tomato & Mozzarella Salad – try using cherry tomatoes and mozzarella balls for fun, especially if you have children in the house or want a more picky food idea. Homemade Chilli Con Carne – arrange on a huge serving plate in the style of the St George flag. Serve with toasted wholemeal pitta bread cut into triangles, l/f crème fraiche and fresh guacamole. St George Dips – make a delicious garlic dip using fresh garlic and chopped parsley mixed into a tub of Quark low fat cheese. Arrange on a small plate with fresh tomato salsa in the design of the flag – stunning & delicious! Serve with toasted wholemeal pitta bread ripped into triangles. (try drizzling the pitta in olive oil & seasoning before baking in a hot oven for 10 mins – great) World Cup Omelette – whisk together 1 egg and 2 egg whites until well beaten. Add some chopped onion and cook in a non stick pan. Once in the pan arrange shredded ham or tomato slices or chopped chorizo in the shape of the St George Flag. Cook until set (finish under the grill if necessary). Enjoy as a meal or share with friends. Come on you Red’s… peppers.. Mix together some precooked rice with chopped onion, peppers, chopped chilli, diced ham and a little shredded mozzarella or goats cheese. Fill up several large Red Peppers with the mixture and bake in the oven for about 20 minutes or until cooked. England’s favourite Summer Dessert – for a true British red & white pud you can’t beat fresh strawberries and cream! Cut the calories by using l/f crème fraiche instead or l/f greek yoghurt with a drizzle of honey. Other delicious ideas: Healthier Garlic Bread – use wholemeal or granary crusty baguettes, crush some garlic and mix with a little olive oil and spread thinly over the bread. Sprinkle with chopped parsley and wrap in tin foil. Bake in the oven at 200 degrees for 10-15 minutes. Bruschetta Style Bread – Take some wholemeal or brown crusty baguettes as above, adding the garlic & oil as before and baking. When done add sliced or chopped beef tomatoes, shredded basil and a little red onion to serve. (if you like a cheesy bread, try adding a little light mozzarella too). Paella to share – cook some chopped onion & garlic in a large pan with a little butter. Add some chopped peppers and 1 cup of paella rice (or brown rice) per person. Fry the mixture until the rice looks golden. Add 1 ½ pints of hot chicken or vegetable stock and allow to bubble for a minute or two. Reduce the heat and stir well. Add a teaspoon of turmeric powder and stir. Add any combination of cooked chicken, chorizo, prawns, seafood, vegetables and allow to simmer for about 20 minutes. Add more water if at any point the paella looks dry. About 10 minutes before the end add some shelled peas and stir. Serve in a large dish with friends. Footie Fan Kebabs – marinade some chicken breast chunks in your choice of seasonings (chilli, tomato, tikka, tandoori, thai). Thread onto pre-soaked wooden skewers (or metal ones) alternating with onion and chopped peppers. Brush with olive oil and cook on the BBQ or in the oven until cooked right through. Warm a wholemeal pitta bread and fill with shredded lettuce, tomatoes, cucumber, white cabbage as desired. Unthread the chicken and vegetables from the skewers and place in the ‘kebab’. Drizzle with a little cucumber & yoghurt dressing if desired. Better than a burger - Steak Sandwich – grill a piece of rib eye or rump steak on the BBQ or under a grill or in a griddle pan. Slice when cooked and serve in a granary or wholemeal baguette with salad, onions and some horseradish sauce. Half Time Hot Potatoes – place some baking potatoes in the oven or wrap in foil and place in the BBQ and leave for about an hour. When half time comes open them up with a knife and add any fillings such as tuna, chicken, salad, left over chilli, prawns – and enjoy as a half time snack. Just remember not to eat it with baked beans or cheese, the combination of the high GI of the potato and the sugar in the beans or fat in the cheese will guarantee you fall asleep before the full time whistle!
