One of the reasons heavy iron is so highly valued is its cooking properties. Heat is evenly distributed and held, making it ideal for deep frying, searing and even baking.
NakedPan is a "naturally non-stick" and rust proof pan from Japan, made from cast iron. It enables food to be cooked quicker, using less heat and enhancing the flavour. NakedPans contain recycled cast iron (75%), and the pan can be recycled at the end of its useful life. Compared to copper or stainless steel, cast iron retains heat, allowing the pan to be used for cooking and serving purposes. As the surface of the Naked Pan has no coating, the heat conduction is uninterrupted, enabling the surface temperature to be kept high and the heat evenly transferred directly to the cooking food. The pans have received a positive response within the local market in Japan. Leading teppanyaki chains have replaced their traditional stainless steel teppan and replaced it with cast iron. Additionally Chefs in the UK have been trialing the various pans with positive results – “Chefs are fighting over the pans to use it next”. The science The secret of the NakedPan is the iron oxide film which forms on the surface of the pan at extremely high temperatures. Cast iron is full of carbon, but during the heating process, the carbon in the iron disappears and countless micro holes form on the surface. When cooking, oil soaks through these holes and prevents the surface from rusting. This results in NakedPan being easier to clean after use without the use of detergents. Unlike Teflon coating, no chemical substances are created, even when the NakedPan is heated to over 300°C (572°F). Traditional Japanese “Nanbu” iron kettles are manufactured using a similar process. In developing the Naked Pan, manufacturer Oigen has combined a traditional crafts technique with the use of modern technology to create this strong yet protective oxide film, and to obtain a manufacturing patent for the process.
