Naked Pan
|
With a traditional technique inherited from past craftsmen, the skill of Nanbu-tekki (iron kitchen wares - pans, kettles and other iron wares) made in Nanbu (the present Iwate Prefecture)is one of the most famous Japanese traditional handicrafts.
The Company Oigen has been manufacturing cast iron kettles for the past 150 years. Oigen has focused on the merits of the traditional technology combing with an industrial technology (patent obtained) and has been able to produce a safe and secure rust free, non coated, iron only pan called the Naked Pan. When the iron material is being casted and hardened at a heat of 900degreesC (1,652F) for about 1 hour, an oxide film results on the surface which has the effect of preventing rust. During the heat hardening, carbon in the iron material disappears and countless micro holes are formed on the surface of the NakedPan. Cooking oil soaks through these holes and as a result, prevents the surface from rusting. This enables the pan to be non stick and easier to clean. NakedPans contain recycled cast iron as well as new iron. As the only material used is iron, the pans can be completely recycled. |
