Japanese: 緑茶; ryokucha is derived solely from the leaves of the Camellia sinensis and has undergone minimal oxidation during processing.
Green tea originates from China, yet has become associated with many cultures in Asia - Japan to the Middle East. Variable growing conditions, processing and harvesting can attribute to differing flavour, look of the tea and also the colour. Thus many variations of "green" tea have been created. With over 500 different varieties of Green Tea located in around 50 countries (though China around 1,000 different types of tea, though most Green) no wonder there can be miss understandings between the various types of Green Tea, the properties of the green tea, the colour and also flavour. Japanese Green Tea Japan, like China have specific areas that are well known for producing Green Tea. Shizuoka is extremely famous for producing excellent "gold" awarded teas. Japanese Green tea have many varities of green tea, similiar to China, though it is predominately the processing that changes as well as what is added to the tea and when it is harvested. Serving Green Tea When drinking green tea, pay attention as much to the smell as to the taste. It is important to follow brewing instructions as with the type of water. Here in the UK the water generally is quite hard and can dull the taste of a typically sweet tea, whereas using spring water or bottled water can change the flavour even further. O Shelf Life Green tea has a shelf life of about eighteen months if stored properly. It should be stored in such a way as to keep it protected from humidity, light, oxygen, and heat. Some people put their green tea into their refrigerators. That is ok, but the tea should be allowed to warm to room temperature before it is opened so that the tea stays dry.
